RECIPE PREPARATION Quince jams:

Remove the puff pastry from the freezer.

Cut uniform squares and put quince jam in the middle.

We join two ends, put them in the tray and put them in the preheated oven.

Bake for about 15 minutes.

Quinces with quince jam - Recipes






I always liked croissants, they were a very accessible dessert when I was little, my mother used to do it very often. But it hasn't been done for years, we rarely eat donuts, they had already become a delicacy :))

But I decided to make them too so as not to die of lust :))

With this recipe I participate in the February challenge hosted this month by Vio.

  • 750 gr flour, 5 tablespoons osanza, 3 tablespoons sugar, 25 gr yeast (one cube), vanilla sugar, lemon and vanilla essence, lemon peel and orange, 2 eggs, 200 ml milk (or water), strawberry jam .

I put the flour in the bowl and made a hole in the middle.

In the depth I put osanza, lemon peel and orange and I mixed them well with flour.

In another bowl I put warm water in which I dissolved the yeast, sugar, essences and vanilla sugar. I left the mixture for 10 minutes, then I added it over the flour with osanza.

I also put the 2 eggs and I kneaded well an elastic dough but not soft.

I let it (covered with a clean towel) grow for an hour.

Then I floured the table and spread the dough. I cut pieces of dough that I filled with jam and then rolled them.

I put it in the tray on baking paper and left it in the preheated oven for 30 minutes.

To prepare jam croissants according to this recipe, you will need the following products…

Ingredient:

150 g cold butter (from the fridge) with 80% fat

How is it prepared?

Heat the milk and dissolve the yeast in it together with a teaspoon of sugar, cover with a towel and let it rise for 5-10 minutes.

Separately in a bowl mix eggs with sugar until the composition becomes fluffy. Add the eggs over the flour and knead the dough until it becomes elastic. Before being laid on the worktop, the prepared dough is left to rest for 15 minutes.

Sprinkle the flour on the worktop and with a rolling pin spread the dough in a circle about 0.5 cm thick. Cut it into triangles.

Grease the dough with jam and roll the croissants. The obtained croissants are placed in a tray lined with baking flour, greased with yolk and milk and put them in the oven, in the preheated oven at 180 degrees Celsius, for 15-20 minutes, or until nicely browned.

Puff pastry with quince jam

ingredients
-for the dough :, 700 g white flour, 2 eggs, 5 tablespoons sugar, 1 sachet 7 g dry yeast, 200 ml yogurt, 200 ml whey, a little salt,, -we also need:, 200 g butter, 50 g lard , 1 egg, 1 jar of quince jam (or any hard jam or chocolate, shit.)

Melt the butter and mix it with the cream and vanilla essence, in a large bowl, which will allow us to knead. Add flour and knead a well-kneaded dough, which comes off the walls of the bowl. We move the dough on a food foil, shape it into a disc and put it in the fridge for at least an hour before use. After removing the dough from the cold, divide it into 5 equal parts. We work with one piece of dough at a time, while we keep the others in the fridge. We spread the dough in a disc with a diameter of 20-25 cm and a thickness of at least 0.5 cm.

Grease the dough with a thin layer of jam and cut it into 8 equal triangles. Or cut the dough into 8 triangles and grease each with jam. As it seems easier to you, so do it. If they are greased individually, the jam is less likely to come out when baking, because we can leave a margin on each croissant.

After that, we roll the triangles from sea to small, to form the croissants. Place them in the tray, on baking paper and bake the croissants for 18-20 minutes or until they start to brown. Let them cool, then powder them with vanilla sugar. They are perfect with a glass of cold milk or hot chocolate, but also for the school package, as a small sweet snack. And, of course, if you take donuts to your grandparents or mothers, you will awaken beautiful memories!


Quince cheese croquettes

When we prepare these rich and original croquettes, we wonder if we should take them as a savory snack or as a dessert. We think both options are worth it. The additional ingredients we put (onion, spices) or the sauce we accompany (jam, cheese.) Will be decisive when serving these croquettes before or after the meal.

Preparation:

1. Chop the chives and sauté them in a pan with oil. When it is well fried, add the flour and sauté for a few minutes so that it takes on color and loses its raw flavor.

2. Add the milk and dissolve it little by little in the flour until the lumps are removed. Let the dough cook for a few minutes until it comes off the tray.

3. Add the cheese and quince and mix. Remove the pan from the heat and allow the croquettes to cool.

4. Once the mixture is cold, form the croquettes and cover them with a first layer of breadcrumbs, then wrap them in beaten egg and then in breadcrumbs again, so that they take on more firmness during frying. We fry them in a lot of hot oil.
