My dears as you already know October is the pumpkin month, so I decided to do some delights with pumpkin, like a pumpkin pie, baked pumpkin and we can do a lot of things with it. For me the smell of autumn is the smell of pumpkin and cinnamon. I would tell you how to do an easy pie.

INGREDIENTS:
5 tablespoons greek yogurt style
Pinch of salt
2 to 3 tablespoons sugar
vanilla essence
an egg
2 tablespoons oil
baking powder
flour as much as we need

FILLING
500 gr grated pumpkin
5-6 tablespoons sugar
cinnamon

PREPARATION
We start with the filling: place the grated pumpkin in a pan to cook with sugar and cinnamon until it will soft and let it cool.
We make the dough: greek style yogurt, sugar, vanilla essence, pinch of salt, egg and oil, mix all together. Place 2-3 tablespoons of flour mixed with baking powder and incorporate, then add the flour at a time until we get a dough that can be stretched. It is divided into two, stretch sheet, place in pan with baking paper, fill and other sheet. Prick with fork and bake 40 -50 minutes on medium heat until it will be golden- brown.

I liked a pie, which I was treated by a friend. Of course I asked for the recipe and I prepared it myself.
It is very tasty and successfully takes the place of the cheese pie!

1 packet of pie sheets
900-1000 gr yogurt
7 eggs
300 gr sugar
100 gr margarine Rama
lemon peel

Composition preparation method:

Because I usually buy ready-made pie sheets from the market, they are also frozen.
Let the pie sheets thaw, during this time prepare the filling.
Mix the yogurt with the lemon peel, which will give it a pleasant aroma.
Beat the egg whites well, add 100 gr. sugar and beat them until they come out like a meringue.
Beat the yolks with 150 g of sugar until they turn white and increase in volume.
In yogurt, add the yolks, then the egg whites and mix well, so that the eggs integrate well.

Normally we need a rectangular oven tray, about 3 cm high, but I used a round tray with a detachable wall.
Place 3-4 layers of pie sheets, the edges of the sheets to protrude slightly from the tray and will not allow the composition to stick to the edge of the tray.
Melt the margarine and grease each sheet with a brush.
Pour the filling into the pan and level.
On top of the filling we put another 3-4 sheets of pie, greased with margarine between them, including the top sheet.
Put the pie in the oven, it is already hot and let it brown well for about 45 minutes.
After baking, remove the pie from the oven, leave to cool well.
Portion with the knife into squares or slices and serve each portion powdered with powdered sugar.
