This fall I decided to make my own grape juice. I am not used to drinking commercial juices, not even from the "natural" ones or with the "identical natural" aroma: P
The amount made is for an entire winter :))
Because my father made wine, I was lucky with the press that squeezed my last drop of berry juice, but I think a juicer would work just as well (only slower for 30kg: P). So I squeezed the beans twice.
Then I prepared the preservative according to the instructions on the package and mixed it with the rest of the juice. I know it's not really healthy, but it's the compromise made to make sure my juice doesn't ferment.
It's February, and I just celebrated the end of a stressful but successful session, with the juice as fresh as 4 months ago!
The signal for the end of wine fermentation is the decrease of the glove. A loose sediment should form at the bottom and the wine should be drained without hitting it. To do this, it is placed in advance in a higher place and in a wine container, which does not bring the sediment closer than 3 cm, put one end of the transparent tube. The other end is placed in a clean, dry bottle, where you will pour the wine. At this point, the wine must be judged and, if necessary, added last with the sugar.
If no sugar needs to be added, the broken wine bottles are tightly sealed with corks and matured in a room with a temperature between + 5 ° C and + 16 ° C. The most important thing is that when young wine ripens there are no daily temperature jumps. The maturation stage of the wine can last between 40 and 360 days. In the maturation process, if you see an accumulation of sediment at the bottom of the bottle, you need to pour the wine into another vessel, using the same tube. This must be done until the sediment almost ceases to form.
The wine can be considered completely ready. It can be stored in suitable conditions for up to 5 years.
The process of making homemade wine may seem complicated only for the first time. But if you do all the procedures correctly at least once in the future, you should have no difficulty.
Ingredients for the grape muffin recipe:

- 250 ml soy milk
- 50 ml oil
- 100 g brown sugar
- A vanilla essence
- ½ teaspoon of salt
- ½ teaspoon baking soda
- 1 teaspoon baking powder

Bake the muffins for 20 & # 8211 30 minutes. Remove from the oven and allow to cool. It can be served with chocolate or almond flakes on top.

I left the small grains whole, cut the large grains in half and cleaned them of the seeds. It is not necessary, but I did so.

I boiled this grape jam for about 20 minutes on low / medium heat. I stirred from time to time. I let it fall well, to bind.
When it dropped and gained consistency I put out the fire. Be careful not to caramelize! How much is a syrup, a jam or a jam boiled? The simplest and most correct is to use a confectionery thermometer and to follow its gradations: at 105 C the jam stage is reached and we can stop boiling. Yes, all water sugar solutions will have the same consistency and concentration at 105 C but it will take more or less until we reach this stage, depending on the water content of the fruit. My thermometer can be purchased here. I always use it to prepare Italian meringue for macarons, of the Swiss one for meringues, la whipped cream as well as all the jams, jams and syrups they make.

- Put the resulting juice on the fire again and add the sugar provided in the recipe.
- Allow to reduce by half, then add the lemon juice, bring to a boil and turn off the heat.
- The syrup is poured hot into previously sterilized bottles.
- Close the sealed bottles and turn the bottom up for a few minutes to form a vacuum.
- After about 10 minutes, return the bottles to their normal position and allow the syrup to cool slowly, then transfer to the pantry.
