RECIPE PREPARATION Beef salad:

Boil the meat together with the vegetables in the water in which the vegeta is added. Then remove from the juice and cut everything into small cubes, mix and add the apple given through a large grater, then mayonnaise made from the 3 boiled yolks, one raw, oil and mustard. Add lemon juice during mixing. After mixing the mayonnaise well with the other components, put the salad in various forms (plates) and garnish with donuts and boiled egg whites. Great appetite!

  • Put on low heat and gradually heat. The meat should boil without boiling.
  • When the foam starts to form, remove it with a spoon.
  • Repeat the process 3-4 times until it is no longer formed.
  • Boil everything over low heat for 3 hours.
  • Then wash, clean and chop all the vegetables into small squares.
  • The meat is also chopped.
  • Now we start making mayonnaise.
  • In the blender put 2 boiled egg yolks, mustard, oil, salt, pepper, lemon juice and cold water. Choose a strong program and let it homogenize. Mayonnaise can also be made with a mixer, but it's safer in blender, so as not to cut.
  • Pour the mayonnaise over all the chopped ingredients.
  • Leave in the fridge for a few hours.
  • Then garnish with olives, pickles, donuts and boiled eggs.

Vegetarian beef salad

If one of your relatives or acquaintances has a vegetarian menu, you can prepare a different beef salad. You would think that the only different ingredient might be the lack of meat, but it takes a greater variety of vegetables to replace the taste of meat.

Ingredient: 200 g pickled cucumbers, 150 canned peas, a can of corn, 250 boiled sweet potatoes, 150 grams of boiled carrots, 150 g pickled donuts, a tablespoon of mustard, parsley, olives, soy, celery or beets, olive oil, lemon, avocado, garlic.

  • Wash, clean and finely chop all the vegetables.
  • Our recommendation is to leave the soybeans in the water with spices for a few hours, in order to catch flavor.
  • In the blender add avocado, garlic, lemon, olive oil, mustard. And this will work as a mayonnaise, to coagulate the composition.
  • Mix all the vegetables together with the avocado and mustard sauce.
  • Garnish according to your own taste with celery leaves, beets, olives, pickles and donuts.
  • Refrigerate the salad for a few hours before serving.

Beef salad with chicken breast

According to the classic recipe, beef salad is made with strips of beef. However, pre-cooked chicken breast can taste just as good. In addition, it is a healthier and more dietary choice.

Ingredient: 500 g of chicken breast, 1.5 kg of potatoes, 2 parsnip roots, 2 carrots, 1 small celery, 500 g of pickled donuts, 5 eggs, 1 lemon, oil, salt, pepper, paprika.

  • Wash, clean and boil all the vegetables. Boil the potatoes separately.
  • Wash the chicken breast, cut into slices and season.
  • Then put in the oven for up to 35 minutes at a temperature of 230 degrees.
  • Cut all the vegetables into cubes and place in a large bowl.
  • Mayonnaise is prepared from 3 boiled egg yolks, 2 tablespoons of sweet mustard, lemon juice and spices. You can also use a mana blender.
  • Cut the chicken into cubes and place in a bowl with the vegetables.
  • Mix all the ingredients and season again to taste.
  • Leave the preparation in the refrigerator for a few hours.
  • It is decorated according to preferences.

  • Cut the vegetables and apple into cubes.

  • All the ingredients are mixed, and at the end we add the lemon juice.

Beef salad is a popular food in Romania similar to Olivier salad, also called "Russian" in the Republic of Moldova. It is often served as a first course on festive occasions or as an "entrée". Beef salad includes carrots, peas, green beans, potatoes, all-cooked beef such as pickles and, where necessary, diced, tied with mayonnaise. Garnish with mayonnaise, black olives, dill and pickles.

The original salad was first prepared in 1860 by the Belgian chef Lucien Olivier under the French name of game salad at the Ermitaj restaurant (Эрмитаж), one of the largest restaurants in Moscow. The original recipe was kept secret and was lost in 1905 when the Ermitaj restaurant closed its doors. All that is known is that the recipe included expensive delicacies, game meat, crayfish and peas. After 1905, many chefs from all over Eastern Europe invented similar recipes, but replacing the original ingredients with cheaper ones such as chicken or beef (in French boeuf means "beef"). These salad variants, with various names, have become a very common dish in different countries such as Russia, Poland or Romania, changing their recipe according to the foods used in regional cuisine.

The current Romanian beef salad, called more and more frequently Boeuf salad", consists of peas, carrots, potatoes and meat or organs (eg beef heart) boiled and then diced, to which are added pickled cucumbers and / or diced pickled donuts. This composition is then incorporated into mayonnaise and garnished.

Is it a beef salad?

The holidays are coming and he doesn't seem to be a healthy man if he doesn't have a beef salad on the table. What I do know about this salad is that we gave it this French name, that the French call it Russian, and the rest call it Olivier after the one who invented it, a certain Belgian chef who worked in Russia.

My salad is not Olivier, it could be Russian and it's beef, because it uses beef. I don't talk anymore and go to work. This time I structure in chapters dedicated to each ingredient.

I sliced ​​600g of beef pulp and browned it in oil in the pressure cooker. I took the meat out and threw in the oil a small celery, a carrot and two large onions, all coarsely chopped. Until the vegetables hardened, I cut the meat into cubes which I added back to the pot. I covered with 2 liters of water and pressurized the pot. I cooked for an hour after which I separated the meat from the vegetables and the juice that will be used as a base for a soup.

I took a healthy beet and baked it at 160⁰C for an hour and a half, until the fork went through it. I cooled it, cleaned it using gloves and cut it into 1cm cubes that I salted.

I cleaned 500g, cut them into discs of about 1 cm, put them in the tray with beets, seasoned them with oil, salt, pepper and baked for 40 minutes. I took out the slices and -I cut into cubes.

I cut 350g of carrots into cubes slightly smaller than those of beets and potatoes. In a pan I melted 50g of butter, I added the carrots, I sautéed for 2 minutes and I added 50ml of water. I put the lid on and let it simmer for about 10 minutes. I seasoned with salt and pepper.

I pan-fried 200g of frozen peas for 5 minutes and seasoned it.

Onion:

I cut half a red onion into very small cubes.

I started with 2 egg yolks, a teaspoon of mustard with whole grains, lemon juice and two finely chopped anchovy fillets. I started beating with the mixer at low speed and gradually incorporated 200ml of oil. To this mayonnaise I added two more tablespoons of cream and finished the sauce.

I then combined all of the above in a bowl and served with toast.


What contains beef salad

First of all, for this recipe we need beef, more precisely rasol, (beef means beef in French). There are many recipes online in which beef is replaced with chicken or turkey, but in this case we can no longer call this preparation, beef salad.

The vegetables from the Romanian beef salad are: potatoes, carrots, celery, peas. I also add green beans, it gives it a wonderful taste. After cooking, cut the vegetables into small cubes and mix with cucumbers and pickled donuts (also cut into small cubes) and mayonnaise.

  • For starters, we put the donuts and cucumbers in a strainer to drain well.
  • In a large pot, put 2-3 liters of water, add the brine and 2 teaspoons of salt.
  • After the first boil, throw the first water, wash the pot in which it boiled. Fill the pot with 3-4 l of warm water, add the brine, celery cleaned and cut into slices, carrots cleaned and cut into 3-4 cm pieces and a whole onion, cleaned, notched at the ends. Cover the pot for three quarters with a lid and let the meat and vegetables simmer until completely penetrated.
  • In a separate pot, boil the whole potatoes in their skins until they are penetrated.
  • In a smaller saucepan, cook the peas and green beans until they are penetrated.
  • Remove the brine, carrots and celery from the soup and let them drain in a strainer and cool.
  • Remove the potatoes from the water in which they boiled and let them cool completely. Drain the peas and beans and leave them in a sieve to drain and cool.
  • Cut the carrots, celery, cucumbers, donuts, raisins, green beans and potatoes, cleaned into small squares and put them in a bowl.
  • Add mayonnaise (I use less mayonnaise, but you can put as much as you want) and mix carefully. Cover the bowl with plastic wrap and put it in the fridge.

How to prepare the crunchy base

  • In a detachable circle, form a layer of 2-3 cm from the crumbly dough that you press well with a spoon.
  • Add the beef salad and level it nicely. Cover the circle with food-grade plastic wrap and leave it in the fridge for 1-2 hours. I left him until the next day.
  • We carefully remove the circle,

  • We coat the cake in a layer of mayonnaise. We decorate it on the edges with slices of boiled egg.
  • For the tufts on the cake, I mixed 1 tablespoon of ketchup with 2 tablespoons of mayonnaise and on top of each tier I put well drained capers and a parsley leaf.
  • And because I still have salad and crumbly dough left, I also made two salad mini cakes.

What meat do we choose for a beef salad?

Ideal to find beef broth with bone (Motsching), beef knees or broth slices with bone marrow. How good is the hot marrow taken out of the bones directly on toast! With a little salt and pepper or grated horseradish is a delight! If you can't find beef knees, you can use so-called & # 8222 beef for soup & # 8221 & # 8211 pieces of breast with slippery layers of connective tissue and bones (ribs or rounds of beef leg). That's how I bought & # 8211 3 pots of 600 g each. The meat was about half the amount, the rest being bones.
